My Favorite Cookie

I am a sucker for Peanut Butter Cookies!  I don't know why, but I just LOVE Peanut Butter Cookies! 

With that being said...

My children wanted some cookies.  They had eaten all the other cookies in the house and were begging for more!  So I thought that since I had not made any Peanut Butter Cookies, that I would find a new recipe and make it into my "brownies" recipes.  I found this recipe at Allrecipe.com and thought I'd try it!

Ingredients:

1 cup butter, softened
1 cup white sugar

1 cup brown sugar

2 egg

1 teaspoon vanilla extract

1 cup peanut butter

2-1/2 cups all-purpose flour

1-1/2 teaspoons baking soda

1/2 teaspoon salt


Preheat oven to 375 degrees.  In a large bowl, cream together the butter, both sugars until them are light and fluffy.

Then beat in the eggs.

Add vanilla.

Mix in the peanut butter.

Sift the flour, baking soda, and salt.

Add the dry ingredients to the peanut butter mixture.

Here they are my favorite baking pans lately! Spray your muffin pan with spray oil...

...then add a ice cream scoop (2/3 of a muffin cup) in each muffin hole.
Bake for 15 minutes at 375 degrees.

Let the cookies cool completely in the pans and then remove to eat to your hearts content!!

  1. I wish this idea had been around for when my husband was alive -- he was always taking a handful of cookies to make it seem like he had 'real' cookies to eat. In response,my youngest daughter decided to bake her cookies on a round pizza pan as one whole cookie -- this was in the 60s, way before that lady commercialized them in all the malls. I love peanut butter cookies, too, and will use this trick for demonstrations of the solar oven...
