Butternut Squash

We have a ton of butternut squash coming out of our garden this year.  I wanted to share one of the favorite and easy ways that my family loves to eat butternut squash.

We start with a butternut squash.


Then cut the squash in half.


Then scoop out the seeds.  I like to use an ice cream scoop.  It's easy and faster.  You can usually get all the seeds at one time.



Then place the squash in a swallow pan with enough water to cover the bottom of the pan.  You can then add brown sugar to the butternut squash.  Cover the pan in foil...


...and place in 350 degree oven for 30 to 45 minutes.  It depends on the size of the butternut squash.  The squash is done when you can easily flake it with a fork.

This is also makes a great baby food (just don't add the brown sugar).  Once the squash is cooked, put in a blender with a little of the water that is in the pan and puree into baby food.  You can then put in ice cube trays and freeze.  Once frozen, put in zip-lock bags and take out one cube at a time and heat for baby.
