Fast Fruit Cobbler

I want to share with you a quick and easy cobbler that you can use for any type of fruit, from can to frozen.  We like to freeze fresh fruits throughout the season and then use them in smoothies or this easy cobbler.  It really makes a winter meal!  Especially if you serve it a-la-mode!  Give this recipe a try!  I think you'll like it just as much as we do.  P.S.  I was going to include a picture of the cobbler I made tonight, but it got gone before I could!


1 cup of flour
1 cup of sugar
2 tsp of baking powder
1 cup of milk
1 tsp vanilla
2 cups of fruit
1/2 cup of butter (melted)

Combine the flour, sugar, and baking powder in a 2 quart baking dish.  Stir in milk and vanilla to make a thin batter.  Place fruit over the batter.  Put butter over top.  DO NOT STIR. Bake at 350 degrees for 30 to 40 minutes until nicely browned. Try any fruit that you have, fresh or frozen.  A small hint:  fresh berries, if not really ripe, will need some more sugar.  I usually also add extra sugar on blackberries and tart peaches.  This serves 4 to 5 adults.
